I am not a great fan of cheese cake, but ever since my dear has been getting us a box of this whenever we go past this place, I have some likings towards it, and now eventually it has became one of my comfort food when it comes to some of those grey-skies day….

Homemade Marshmallows (Recipe Included)

I saw Tyler Florence make marshmallows the other day WITHOUT high fructose corn syrup and I just had to give them a try! They turned out great! Even Jamison liked them! :O)

3 tablespoons (packets) of powdered unflavored gelatin
2 cups of cold water
2 cups of granulated sugar
2 egg whites, room temperature
2 cups of powdered sugar

Dissolve gelatin in cold water. This takes anywhere from 5-10 minutes. Pour water with dissolved gelatin into a medium sized sauce pan and add granulated sugar. Heat over low heat until sugar is completely melted. Remove from heat and let the sugar/gelatin mixture come to room temperature. (IMPORTANT: Mixture must be cooled to room temperature!! Don’t try to get ahead and put it in while it’s still slightly warm or your egg whites will collapse!)

Once sugar mixture is cooled beat your egg whites until stiff peaks form. Fold in powdered sugar. With mixer on low slowly pour your sugar/gelatin mixture into the egg white mixture and it will become roughly double in size. Beat on medium for 1-2 minutes until slightly thick.

Line an 8 X 8 inch baking dish with tin foil and coat the foil with butter. Dust the buttered foil with powdered sugar. Pour in marshmallow mixture (at this point it will still be slightly liquid, but it will be sort of thick as well…it reminded me of melted marshmallow cream) and spread it out into your pan.

Dust the top of the marshmallows with more powdered sugar.

Let the pan sit 3 hours to overnight. Cut into squares and top with more powdered sugar if desired. Store covered.

They are great in hot chocolate! :o)

NOTE: While trying to find this recipe online I came across a few sites that suggested people were having a hard time making this recipe work. It worked fine for me. I think that if it fails it would fail for one of several reasons. 1) As I mentioned above the person did NOT let the sugar/gelatin mixture come to room temperature causing the egg whites to collapse when they were added. Or 2) The egg whites weren’t beaten to stiff peaks and that caused issues. (See the link above as to what a stiff peak looks like.) Or 3) A combination of 1 and 2.

Variations:

You can add in a teaspoon of vanilla for vanilla marshmallows.

You could substitute 1/4-1/2 cup of unsweetened cocoa for 1/4-1/2 cup of powdered sugar for chocolate marshmallows. Use more chocolate (1/2 cup) depending on how chococately you want them.

You could add a teaspoon of peppermint extract and swirl in some red food coloring when you place it in the dish to make peppermint marshmallows.
