Lunch today – under the lilacs

Lunch today -  under the lilacs

Buttered grill sandwiches with ham, Gouda cheese, red pepper and with savoury quark cream on the top. Scattered with chopped chives and fresh basil leaves.

Savoury quark cream with herbs (created by me):

1 1/2 cup quark (cottage cheese or ricotta)
1 Tbs sour cream (or yogurt), (or more if necessary)
1 Tbs olive oil
1 clove finely crushed garlic (or more cloves if you like garlic)
1/4 leek, finely chopped
1 1/2 bunch parsley, finely chopped
1/2 cup chives, finely chopped
10-12 fresh large basil leaves, finely chopped
3 Tbs fresh thymian leaves, finely minced
2 Tbs toasted ground pine nuts (or toasted ground almonds)

salt
freshly ground white pepper

Use a blender if necessary.

Kontakt grill szendvics megvajazva, sonkával, Gouda sajttal és pritamin paprikával töltve, tetején a zöldfűszeres túrókrémem snidlinggel és bazsalikomlevéllel díszítve.

Túrókrém (saját recept):

25 dkg túró
1-2 ek tejföl vagy joghurt, amennyit felvesz
1-2 ek olivaolaj
1 nagyobb póréhagyma 1/4-e, finomra vágva
1 gerezd szétnyomott fokhagyma
1 nagy csokor petrezselyem finomra vágva
1 nagy csokor snidling finomra vágva
10-12 friss nagyobb bazsalikomlevél aprítva
3 evőkanál friss kakukkfű levele, tépkedve
2 ek pirított, darált fenyőmag (vagy pirított, darált mandula)


fehérbors

Robotgéppel aprítottam és kevertem ki, de nem szükséges hozzá.

Naan (w/recipe)

Third time’s a charm. I wasn’t thrilled with the texture of the last batch, so I looked around some more and combined a few different recipes and came up with this. These are softer and have a chewier texture. I’m happy now. =)

Naan

1/2 tsp baking powder
1/2 tsp salt
1 tsp sugar
about 4 cups flour (enough to get a good, soft dough)

3 Tbsp soy or rice milk, plain
1 cup vegan yogurt
1/2 tsp instant yeast
3 Tbsp melted margarine
2 tsp Ener-G Egg Replacer + 1/4 cup water, beaten

Combine dry ingredients (less @ 1/2 cup flour) in large bowl, set aside.

Combine soy/rice milk, yogurt and butter. Heat in microwave until warm (@ 45-60 sec). Add yeast and Egg Replacer, mix.

Add to dry ingredients. Mix. Add additional flour if needed to form soft dough. Knead 15 minutes until dough is elastic. If dough is sticky, add more flour.

Place in greased bowl and cover with damp tea towel or lid, allow to double in size (depending on temp, could be 1-3 hrs).

Preheat George Foreman grill.

Divide dough into 8 sections and roll into balls. Flatten either by hand (for a more rustic look) or with a rolling pin. Cook on grill until lightly browned.

Can be brushed lightly with melted margarine, but these are great plain!
